Cheesy Asparagus Rice

Ingredients:

  • 1 tsp Shirley J Chicken Bouillon((for rice))
  • 1/2 c. Shirley J Whisk Bliss Original
  • 1 c. Long Grain Rice
  • 1 3/4 c. Water((for sauce mixture))
  • 1 Tbs Butter((for rice))
  • 2 c. Water((for rice))
  • 1 c. Fresh Asparagus, Chopped
  • 8 oz Processed American Cheese

Directions:

In a stockpot, combine rice, water, and butter and bring to a boil. Turn heat to low and cover for about 15 minutes. While rice is cooking, combine, in a small saucepan, water and Whisk Bliss. Bring to a slow boil, simmer for 3-4 minutes, and add asparagus and cheese. Stir until cheese is melted and remove from heat. Add asparagus mixture to fully cooked rice. Cover and let stand for five minutes. Stir gently and serve.

This is a very tasty dish and great to make in the spring when asparagus is fresh and cheap. However, that's a TON of cheese! I found some veggie based processed cheese that tastes like American cheese in the produce section of my grocery store. I tried it on a sandwich and couldn't tell the difference, so I may try it in this dish next time I make it.
