The Shirley J Home Chef Blogger Recipe Contest continues! For the July 2009 challenge we want you to come up with the ultimate BBQ main dish! We are right in the heart of summer and are eager to make the most out of that grill! This is a quick turnaround challenge so grab that BBQ seasoning and fire up! We can’t wait to try your spin on kabobs, pulled meats, steaks, grilled veggies and more! The possibilities are endless!

Official Shirley J Home Chef Blog Recipe Contest Rules:

1. Develop or adapt a main dish recipe using Shirley J BBQ Seasoning Mix
2. Create a NEW post on your blog about your recipe with the following:
(a) complete recipe with specific instructions
(b) original picture of the complete dish
(c) link to the Official Shirley J Blog
(d) link to the Shirley J Web site

(e) post must be dated between July 20 and July 31, 2009 (NEW RULE!)

3. Blog post must be up by designated date: July 31, 2009 at midnight EST
4. Email me at beckyo@shirleyj.com with a link to your post
5. Have fun, experiment and make it tasty!

Each Home Chef entering a recipe will receive $5 and finalists will receive $10. The Home Chef who submits the winning recipe will receive $25 and have their recipe featured on the official Shirley J blog.

*There is not a limit on how many recipes a Shirley J Home Chef can submit. However, each submission recipe must have it’s own blog post and meet all of the above requirements.

One of the funnest days over at Shirley J are the days we get to sample recipes that our Home Chefs have developed or adapted. This month’s recipe contest featured Shirley J Pizza and Pasta Seasoning. We’ll cut to the chase. The winning recipe is Meatball Subs by Home Chef Jessica Olsen of Michigan.

This recipe was hands down the winner by our selection committee! The Meatball Subs used Shirley J Pizza & Pasta Seasoning Mix in both the meatballs and a homemade marinara sauce. It was delicious and messy, just as Jessica promised. Our favorite part about it (besides the taste) was that you can make this meal in less than 60 minutes. Congrats, Jessica. Meatball Subs - JO

Meatball Subs

Serving: Makes 6-8, 6 inch Subs

Ingredients:

Meatballs-
-1 1/2 pounds of lean ground beef
-1 egg, beaten
-1/2 cup finely chopped onion
-1/2 cup plain bread crumbs
-1/4 cup SHIRLEY J Pizza and Pasta Seasoning
-2 teaspoons Worcestershire sauce
-1/4 teaspoons black pepper
-1/2 teaspoon salt

15 Minute Marinara Sauce:
(If you want to save time you can use store bought pre-made Marinara Sauce like Prego. However, I strongly recommend making this sauce.)
-2 tablespoons extra-virgin olive oil
-4 cloves garlic, crushed and chopped
-1/4 teaspoon crushed red pepper flakes
-A handful flat-leaf parsley leaves, chopped, about 2 tablespoons
-1 teaspoon Shirley J Pizza and Pasta Seasoning
-1 (28 ounces) can crushed tomatoes
-1 (14 ounces) can chunky style crushed tomatoes
-Salt and freshly ground black pepper

-Bread: you need bread that is crusty so that the sandwich does not turn soggy. I like to use: French Baguettes or Ciabatta bread and cut them into 6 inch parts. You can buy the bread at your grocery store or I like to get mine at Panera Bread(Midwest) or Kneaders(Utah). You will need 2 loaves of the bread you choose to fill all of the meatballs.

-2 1/2 cups Italian 4-cheese blend

Directions:
1. Preheat oven to 450 degrees

2. Mix all of the meatball ingredients together in a large mixing bowl until all combined, trying not to over-mix. Roll into golf-ball size (or smaller) balls. Place them on a greased cookie sheet. Cook for about 10 minutes, turning half way through.

3. For 15 Minute Marinara Sauce: Heat a medium saucepan over medium heat. Add oil and garlic. When garlic starts sizzling, add seasoning and crushed pepper. Allow oil to infuse for half a minute, then stir in the tomatoes and season sauce with salt and pepper. Bring sauce to a bubble, reduce heat, and simmer for 10 minutes.

4. Combine meatballs and sauce and pile into crusty rolls or bread, 4 meatballs per sub. Top with shredded cheese and place subs under broiler to melt cheese.

Hello Shirley J Home Chefs and Friends!  I’m here to announce the winner of the first-ever Shirley J Home Chef Blog Recipe Contest!

About a month ago, all home chefs were challenged to create an original recipe or adapt a favorite recipe using Shirley J Universal Cream Sauce Base. We were delighted with the creativity and use of the key ingredient. We received entries for everything from chicken divan and enchiladas to classic casseroles and Thai Curry.

After a delightful tasting and much debate (yes we love to eat Shirley J dishes here at work! ) we decided on a winner!

The winning recipe was Creamy White Chicken Chili submitted by Shirley J Home Chef Jessica Olsen of Michigan. Jessica’s chili recipe was a hit at our tasting. We also found it to use Shirley J Universal Cream Sauce in a very palate pleasing, simple and economic way. The recipe echoed our Pantry Management philosophy of using common household ingredients in the pantry, food storage as well as fresh produce and proteins. Creamy White Chicken Chili

Ingredients:
1/2 cup Shirley J Universal Cream Sauce Base
1 pound boneless, skinless chicken breasts(3-4), cut into 1/2-inch cubes
1 medium onion, chopped
1 1/2 TB garlic powder
1 TB oil
2 cans (15 1/2 ounces each) Great Northern Beans, rinsed and drained
1 1/2 cup of made up Shirley J Chicken Broth (see Shirley J Chicken Bouillon label for recipe)
2 cans (4 ounces each) chopped green chilies
1 tsp salt
1 tsp ground cumin
1 tsp dried oregano
1/2 teaspoon pepper
1/4 tsp cayenne pepper
1 cup sour cream
1 1/2 cup water

Directions:
In a large saucepan, saute chicken, onion and garlic powder in oil until chicken is no longer pink. Add beans, broth, chilies and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes. Make Shirley J Universal Cream Sauce in separate pan. Remove from the heat; stir in sour cream and Shirley J Universal Cream Sauce mixture. Garnish with fresh cilantro, if desired. Serve immediately. This is especially good served with tortilla chips, lettuce, and tomatoes.

Makes about 6 servings.
